What's Cooking?

Hi there! So sorry to have been away so long...I'm afraid I've been busy enjoying my family visiting as well as other stuff and haven't had a chance to get on write! My brother and his family came to stay with us for a few days a couple of weeks ago and tomorrow my parents and my two younger brothers are coming to stay for almost a week! What a fun time!!

Meanwhile, Hubby and I are on a kick to eat healthier and each lose a few pounds. We're really enjoying using the MyFitnessPal app where we can connect with some of our friends and stay accountable. We're also enjoying being more active- the weather has been great for riding bikes along the river! It's a challenge to count calories and eat less, but I'm so glad my Hubby's doing it with me- it helps me stay on track!

You know how I said before that I was experimenting with shopping closer to home more often, rather than once a month? Well, I don't think it's going to work out. Our local grocery store is just too expensive, and as often as we make trips to Spokane, it's really not much of an inconvenience to shop there. We went back to our usual grocery store in Spokane (WinCo Foods) and I was so relieved...it felt like home! However, my meal lists and grocery trips and menus were totally off this month because of all our company- just taking it one week at a time for now!

So now that we're caught up, here's the menu for this week!

What's Cooking?

I just realized I haven't posted a menu since December! Oops! Our shopping schedule has been a little off, and my blogging has, unfortunately, been a bit irregular as well. My menu posting is changing a bit anyhow- at least for now. We're trying an experiment for a few months of shopping locally every two weeks instead of in Spokane once a month. It may save us a bit on gas and it will certainly be more convenient. However, we're not sure yet if it will cost more or not. That's the experiment! So for now at least, my menu will be for two weeks, instead of a whole month. Here goes, and happy cooking to you all!

Since we've had several inches of snow drop this past weekend, November is feeling a lot more like winter than fall! However, I refuse to give in to Christmas urges just yet. The icicles and snowflakes may beckon, but until after Thanksgiving I'm devoted to fall!

Meals for a Month {October/November}

Okay so I'm in full-on fall mode! Having had my Dutch Bros. pumpkin spice latte, hunted for squash in the supermarket, filled the crock-pot with soul-warming soup goodness, crunched leaves beneath my feet on my way to the post office (and Instagramed a picture of the gorgeous tree dropping said leaves of course), and burned cinnamon smelling candles in my home, I think I more than qualify as one of the fall-embracers. If there's one thing I totally love about fall it's the soup. I look so forward to our Wednesday nights coming home exhausted and yet hyped up from Awana to a delicious smelling home and a bowl full of warm goodness. Whether it's beef stew, chicken barley soup, some kind of creamy vegetable or spicy chicken tortilla, I'm a sucker for the warm soups this cold season brings.

Meals-for-a-Month {September/October}

Well, hello again! I almost feel like we need an introduction, it's been so long since I wrote last! The last few weeks have been busy ones for us and the next few will be as well, but I hope to squeeze a least a couple of posts out this week. The first order of business, however, is to give you some inspiration with my month of menu ideas. I am truly excited about some of these meals and I can't wait to share them with you!
It's hard to believe I just wrote the word "October" up there in the title. October!!?? That means fall, cold weather, and my birthday are just around the corner! As usual, I have been holding out on fall, resenting the way it creeps in on my lovely summer, but yesterday I indulged in a salted caramel mocha (albeit iced) and sweet potato fries and bought a few cute blazers at Goodwill. Okay, so maybe I like fall. But I'm not letting go of my late summer days yet!

Meals for a Month {Aug-Sept}

I can hardly believe that by the next time I write a menu, it will be almost FALL! The summers just speed by the older we get, don't they? I for one have thoroughly enjoyed the long, warm days and all the beautiful little delights (I refer you to my last menu post!). And I plan on squeezing every memorable moment out of the last days of sparkling sunshine that we get! When you live in a place that can have snow on the ground 6 months or more out of the year, you learn to appreciate summer!! This menu is a little disjointed because we have several events breaking things up...this week is Pend Oreille County fair week and since the church has a booth, our meals will be a mix of fair food (hopefully only once) and quick portable or cold things I can take with us. The following week, we'll be visiting my parents in Oregon for a few days- my grandparents are home from Africa for the summer and visiting my folks. I haven't seen them in 2 years, so I'm really excited about that! When we get home, we have a two day mini conference for our mission organization at a nearby camp! Whew! It's going to be a busy next few weeks, and it all starts today! I'm just going to take a deep breath and hope I'm ready for it! :) Hope you have had a beautiful summer!

Meals for a Month {July-Aug}

Here is is, already the middle of July. Summer just seems to be whizzing by, doesn't it?? I am thoroughly enjoying sunshine, flip flops and less makeup, a slower paced schedule, freckles, tennis in the park with Hubby, tans and toenail paint that doesn't last for months (like it does in the winter!), shorts and breezy sundresses, ice cream, iced coffee, sun-ripened strawberries and juicy watermelon slices, clothes drying on the line outside, lettuce fresh from the garden, brilliant roses, carefree butterflies and busy hummingbirds, fresh cut grass and of course, meat and veggies right off the grill and fresh and crunchy summer salads! To name a few.
