Monthly Menu- June


This menu, once again, is not for the whole month of June. I did shopping last night for about half the month, mostly because of the possibility of a flood in our area. Most likely, it will not reach high enough to affect our home, but just in case, I didn't buy a ton of groceries. If there's any possibility at all that we might have to move the fridge and freezer, I'd rather it wasn't packed to the gills! So, here's hoping my only inconvenience will be having to shop twice in one month. *crosses fingers*
That said, here's my menu (so far!):


Week 1 (May 31-June 4)

Tuesday
Crock Pot BBQ Chicken
Wednesday
Not the best car meal, but we were late, so we ate this on the way to Spokane to go grocery shopping!
Thursday
Baked Creamy Chicken Taquitos with Guacamole and Watermelon
Just discovered some wonderful cooking blogs this month, and this recipe comes from Our Best Bites! I'm so excited to try them because I've never made my own taquitos before!
Friday
Chicken Caesar Salad with Breadsticks and fresh Pineapple
Simple and light. The weather's supposed to warm up this weekend, so a salad should be nice. Pineapple was on sale- I'm so excited!
Saturday
Hopefully it's not too warm outside to try this yummy looking soup recipe from food.com

Week 2 (June 7-11)

Tuesday
Honey-mustard Glazed Salmon with Rice and Asparagus
I tried this recipe last summer, and even Travis, who doesn't like fish, had seconds!!
Wednesday
Dorito Taco Salad with Watermelon
Mom C.'s delicious light and flavorful take on taco salad!
Thursday
Spicy Garlic Lime Chicken with Corn on the Cob
YUM-O. Delicious recipe from the allrecipes.com cookbook.
Friday
Saturday
Leftover Lentil Soup

Week 3 (June 14-18)

Tuesday
We're taking a trip to Couer d' Alene for our anniversary and coming home this day, so we'll probably pick up something on the way home.
Wednesday
Parmesan Baked Salmon with Rice and Corn on the Cob
Hoping this will be another recipe to win hubby over to the yummyness of salmon.
Thursday
Turkey Burgers with Roasted Potatoes
Friday
Pasta Salad with Rolls (?) and Fresh Fruit
Saturday
In Colville for a wedding, where dinner will be served at the reception.

Other treats:
Today I'm making Oreo Cheesecake Cookies, courtesy of the Brown Eyed Baker, I'm making a cake and a pan of yams (complete with marshmallows, of course!) for our Sunday potluck, and hoping to try Catz in the Kitchen's applesauce bread.
